Dark Chocolate Flaxseed Waffles

Ingredients
  • 2whole eggs, beaten
  • 1/2teaspoon liquid stevia drops(see your brands conversion chart if using powdered stevia. Should be equivalent to 1 tablespoon of sugar)
  • 1teaspoon vanilla extract
  • 3tablespoons almond flour
  • 3tablespoons ground flaxseed
  • 1tablespoon cocoa powder
  • 1/4teaspoon baking powder
  • pinch pink Himylayan salt
  • 1tablespoon cocoa nibs(may substitute with dairy-free chocolate chips)
Instructions
  1. Spray a waffle iron with non-stick spray and heat. In a small mixing bowl, add wet ingredients (eggs, stevia, and vanilla), stirring to combine.
  2. Whisk in dry ingredients. Whisk until there are no longer any lumps or bumps. Transfer batter into the heated waffle iron.
  3. When waffle iron timer is complete, remove waffle and transfer to a plate. Top with favorite toppings and serve immediately.
