Ingredients
  • 1/2cup coconut flour
  • 1/3cup unsweetened cocoa powder
  • 1 ripe medium avocado, peeled
  • 1 1/2teaspoons baking powder
  • 1/2cup unsweetened almond milk
  • 2tablespoons melted coconut oil
  • 2 eggs
  • 2teaspoons vanilla extract
  • 1/3cup maple syrupor sweetener of choice
  • 1/4teaspoon salt
  • 1/2cup dairy free chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Grease a muffin tin or apply paper liners and set aside.
  2. In a food processor, combine all ingredients but the chocolate chips. Process on high for 30 seconds, or until there are no more lumps. Stir in half of the chocolate chips (1/4 cup) using a spatula.
  3. Transfer the batter into the prepared muffin tin. Top the batter with the remaining chocolate chips.
  4. Place in the oven and bake for 17-20 minutes. Check with a toothpick for doneness. Pierce the center of the muffin with a toothpick, if it comes out clean they are done. Allow to cool for 5 minutes. Then remove from pan and place on a cooling rack.
