Instructions
Hard boil eggs using your favorite method. When eggs have cooled, remove shell and chop. Transfer the chopped eggs to a medium-size mixing bowl. Stir in mayo, mustard, celery, and green onions. Season with paprika, salt, and pepper. Then stir to combine.
Serve between two slices of bread with cripsy lettuce or spinach.
