Easy Healthy Chicken Salad

Ingredients
  • 1/3cup plain Greek yogurt
  • 1/4cup mayonnaise(I use olive oil mayo)
  • 2tablespoons dijon mustard
  • 1tablespoon lemon juice
  • 1/4teaspoon garlic powder
  • salt and pepper, to taste
  • 3cups shredded chicken(I use rotisserie chicken)
  • 1cup grapes, halved
  • 3 celery stacked, diced
  • 1/3cup red onion, diced
  • 1medium apple, diced
  • parsley to garnish
Instructions
  1. In a large bowl combine yogurt, mayo, mustard, lemon juice, garlic powder, lemon juice, salt, and pepper. Whisk together.
  2. In the same bowl, add chicken, grapes, celery, onion, and apple. Stir until everything is well coated. Garnish with parsley and serve on a slice of bread or with lettuce.
