Homemade Vegan Basil Pesto

Ingredients
  • 2cups basil leaves, tightly packed
  • 1cup spinach, tightly packed
  • 1/4cup sunflower seeds
  • 4large cloves garlic
  • juice of half lemon
  • 1/4cup nutritional yeast
  • 1/2teaspoon salt
  • 3tablespoons olive oil
  • water
Instructions
  1. Add basil, spinach, sunflower seeds, garlic, lemon juice, nutritional yeast, salt, and olive oil to a blender or food processor. Process until combined, the pesto should still have some texture.
  2. Scrape down the sides as needed. Then add 1 tablespoon of water at a time until you get the desired consistency.
