Add olive oil to a large skillet and heat over medium-high heat. When hot, add diced sweet potatoes and season with salt and pepper to taste. Cook for 8-10 minutes until browned and tender.
When potatoes have browned and softened, add diced peppers, garlic, cumin, and chili powder. Stir to combine and cook for 3-5 minutes, until peppers soften.
Add in sliced chicken sausage. Cook for 2-3 minutes until chicken sausage is cooked through. Garnish with fresh thyme and serve immediately.
