Ingredients
  • 1cup uncooked brown rice
  • 1-2tablespoons olive oil
  • 12ounces green beans, trimmed
  • 1large red bell pepper, sliced
  • 4cloves garlic, minced
  • 2 scallions, diced
  • 1teaspoon dried ginger
  • 16ounces ground turkey
  • 3tablespoons coconut aminos
  • 2tablespoons maple syrup
  • salt and pepper, to taste
  • 2-3stalks green onion, diced
Instructions
  1. Bring salted water to a boil in a medium pan. Cook rice per package directions. Remove from heat and keep covered until meal is ready to be served.
  2. In a large fry pan, add olive oil and heat on high for 1-2 minutes. Add in green beans, bell pepper, half of the garlic, and scallions. Stir occasionally and cook for 4-5 minutes. Season with salt and pepper to taste. Remove from pan and set aside.
  3. In the same large pan, reduce heat to medium. Add in another drizzle of olive oil and add remaining garlic and ginger. Stir and allow to cook for one minute.
  4. Add ground turkey to the pan. Break up the meat into small pieces and cook until no longer pink, roughly 5 minutes. Add in vegetables, coconut aminos, and maple syrup. Season with additional salt and pepper to taste.
  5. Fluff rice with a fork and divide among plates. Top with stir-fried veggies and turkey. Garnish with green onions if desired.
