Baked Goat Cheese Strawberry Spinach Salad

Is there anything that sounds more summer-like than a Baked Goat Cheese Strawberry Spinach Salad?

 

Didn’t think so. While this is the most summer-esque salad I’ve eaten in a while, I really only made it because I bit off more than I can chew. I try not to let my eyes get bigger than my britches at the grocery store. However, strawberries were on sale for $0.99 a pound.  I wasn’t able to resist and now I’m drowning in strawberries. In case you haven’t been over to my Instagram feed lately, you made have noticed there have been quite a few strawberries popping up in my photos.

 

This girl just can’t let those beautiful strawberries go bad.  So it’s all strawberry everything this week!

 

The one recipe I just can’t seem to get enough of is my Baked Goat Cheese Strawberry Spinach Salad. That name is a mouthful I tell ya!  Anything with some goat cheese will get my mouth-watering. I mean really, who doesn’t know about my obsession with a little goat cheese. My friends regularly snap me photos anytime they eat the stuff.  But can you blame me? S**t’s delicious!

 

While the strawberries, almonds, and spinach make this meal super nutritious, the baked goat cheese is really the standout.  The key with making baked goat cheese is to give a few minutes in the freezer.  This allows the cheese to keep its shape during the baking process. You don’t want to end up with a melted mess.  One thing I should note, don’t look at my photos for reference cheese size! I may have went a bit overboard and used massive discs for that decadent cheese. If you want yours that size too, you’ll either need to make the recipe for one, or buy more cheese.  Not that those alternatives sound like a problem!

Baked Goat Cheese Strawberry Spinach Salad

Ingredients
  • 4 ounces goat cheese
  • 1 egg
  • 1/2 cup Italian seasoned panko breadcrumbs
  • spinach
  • 1 cup strawberries, sliced
  • 1/4 cup almonds
  • 1/4 cup dressing of choice (I use strawberry poppyseed, berry vinagrette, or honey mustard)
Prep Time 10 minutes
Cook Time 15 minutes

Ingredients
  • 4 ounces goat cheese
  • 1 egg
  • 1/2 cup Italian seasoned panko breadcrumbs
  • spinach
  • 1 cup strawberries, sliced
  • 1/4 cup almonds
  • 1/4 cup dressing of choice (I use strawberry poppyseed, berry vinagrette, or honey mustard)
Instructions
  1. Preheat oven to 375 degrees. Shape goat cheese into small balls, around 1 inch, and place on a large. You should get around 8. Place goat cheese in the freezer for around 10 minutes. In a small bowl, whisk eggs. Place panko crumbs in another small bowl and set aside. Prepare a baking sheet and cover in parchment paper.
  2. Remove goat cheese from freezer. Gently press goat cheese into a disk shape. Dip one disk into the egg mixture allowing the excess egg to drip off. Transfer into the dish with panko to coat. Place on the baking sheet. Repeat with the remaining goat cheese discs. Place in the oven and allow to bake for 10-15 minutes, or until golden brown. Remove from oven and allow to cool while assembling your salad.
  3. Toss spinach or other salad greens with sliced strawberries, almonds, and dressing of choices. Arrange warm goat cheese over the top of salad. Serve immediately.
