Balsamic Berry Grilled Cheese

Happy Friyay all!  It’s another Friday in Lent over here at the Wagner household.  That means we are sticking to meatless dishes every Friday until easter.  I’m trying to go beyond fish for every meal. Sometimes it feels like we are having fish all the time. Do you feel the same?

 

Growing up, one of the things I always remember eating during Lent was tomato soup and grilled cheese. It wasn’t uncommon for me to eat that on a weekly basis. While I don’t mind a creamy grilled cheese with a side of soup, I also like to make my grilled cheese a little more grown up.  It doesn’t hurt to add a little extra nutrients to your bread and cheese, right?!

 

There are a lot of grilled cheese combinations that make my heart sing. Cheese can pair with so many things. Today I’m taking it back to one of my all time favorite cheeses. That’s right —> GOAT CHEESE!  Furthermore, one of my favorite goat cheese combinations is berries and balsamic. Something about the sweet, salty, tart combination makes me feel all the feels.

Overall, this recipe is relatively simple. Add the berries, balsamic, and honey into a small sauce pan. Allow to simmer until the berries soften and start to break down. While the berries cook, butter the bread.  When the bread has been butter, apply a generous layer of softened goat cheese to the inner side of the bread and top with fresh basil. Then, top the goat cheese and basil with a scoop of cooked berries. Place the remaining slice of bread on top and transfer into a warm skillet.  Cook over medium low heat until the bread becomes golden, flip and repeat.

 

After a few minutes, you’ll be left with an ooey, gooey Balsamic Berry Grilled Cheese. A grown up version of your favorite comfort food!  I suggest making more than one…you’ll need it!

Balsamic Berry Grilled Cheese

Ingredients
  • 1/2 cup berries (blueberries, raspberries, blackberries)
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 2 slices whole wheat bread
  • 1-2 tablespoons butter
  • 2 ounces goat cheese, softened
  • 3-5 fresh basil leaves
Cook Time 15 minutes

  • 1/2 cup berries (blueberries, raspberries, blackberries)
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 2 slices whole wheat bread
  • 1-2 tablespoons butter
  • 2 ounces goat cheese, softened
  • 3-5 fresh basil leaves
Instructions
  1. In a small saucepan, combine berries, honey, and balsamic vinegar. Bring to a boil with medium heat. Once boiling, reduce heat and simmer for 5 minutes. After simmering drain excess juice from berries.
  2. Take one slice of bread and spread with half the butter on the side you will be frying or grilling. On the unbuttered side, top with goat cheese, berry mixture, and basil. Butter other slice of bread and place on top. In a small fry pan, heat until both sides are golden.
