It’s pretty rare around this household to have anything other yogurt, fruit, or cottage cheese. I simply am not big on traditional breakfast foods (ahhh the horror!) nor do I want to get up extra early to put a fancy breakfast together. My husband is probably disappointed with my breakfast skills on a daily basis. He is a lover of all things breakfast. Give him all the eggs, bacon, and hash browns.
If you saw my recent post for Chocolate Protein Waffles earlier this week, you should be amazed that I not only made some fancy schmancy breakfast waffles once, but twice. It’s a miracle! Truth be told, I got this iron from my Mama! The waffle iron they have at home usually sits and collects dust, so someone might as well use it. In turn, I’ve gotten to play around with my breakfast game. Now I’ve got one happy Hubby and I’ve been making him these delicious Egg and Veggie Hash Brown Waffles. It even has me craving some breakfast delights.
The best part of this recipe is you can whip up just one or enough for your weekly meal prep. I actually made these while our dinner was cooking away in the oven. I just combined the cheese, vegetables, hash browns, and eggs into a mixing bowl and poured into the hot waffle iron. In all reality, you could make this recipe even easier and purchase pre-cut frozen vegetables. When they were finished, I just put them into different storage containers for the Hubby to take to work.
You’d easily be able to change this recipe up and add in different vegetables or breakfast meat. I may try my hand at some with turkey bacon, mushrooms, and our garden tomatoes. Maybe I’ll even throw in some goat cheese! All I know is, I hope my Mom doesn’t read this and decide she wants her waffle iron back.
Egg and Veggie Hash Brown Waffles
Ingredients
· 2 whole eggs
· 1 egg white
· 1/2 cup hash browns, cubed
· ½ cup frozen or chopped onion
· ½ cup frozen or chopped green pepper
· ¼ cup shredded cheddar cheese or cheese of choice
· Salt and pepper to taste
Instructions
1. Heat waffle iron and spray each side with non-stick cooking spray
2. In a mixing bowl, combine egg, hash browns, vegetables, cheese, and seasoning. Mix well to coat all ingredients in the egg.
3. Transfer mixture to waffle iron and spread evenly. For smaller irons, spoon mixture into the waffle iron and spread to fill surface. Close the waffle iron.
4. Cook for 3-5 minutes or until golden brown.
5. With a fork or tongs, carefully remove waffle from the iron and transfer to a plate.
6. Serve on their own or add favorite omelet toppings such as avocado, salsa, sour cream, or chives.
