Pumpkin Spice Oat Pancakes

 

It’s pretty common for me to take bit of flack when it comes to my healthy eating habits, especially from my family.  After all, dietitians are better known as the food police. (Insert eye-roll here). I’m often the butt of many healthy eating memes that get sent my way.  My sister is always on the top of her meme game.  Just the other day I was sent a nice video of an iguana being poked with a piece of lettuce with the quotes, “when your friend tries to make you join them in healthy eating.”

 

Ahhh the comedy.  But I didn’t see her complaining after she downed a half batch of my Pumpkin Spice Oat Pancakes. Nope, not a single complaint.  Aaannnndddd, she spread the word that she liked them too. Do you know why?  Because delicious food doesn’t have to unhealthy.  Why not just have the best of both worlds.  That’s definitely the case with these pancakes.

 

They are everything you want in a pancake on a cool, fall day.  The flavor is cozy, the texture light and fluffy, and best of all, you get to sit down to a nice hot breakfast.  You’ll even be able to sneak in a touch of vegetable!  So can I blame her for inhaling her pancakes. No.

 

 

Furthermore, I can’t seem to get enough of these Pumpkin Spice Oat Pancakes either!  In the last two weeks, I’ve made them four times.  That’s saying something for me.  If not my go-to eggs, I’m usually trying new things in order to play with some different recipes.  But these guys just don’t get old!  Tis’ the pumpkin season after all.

 

These Pumpkin Spice Oat Pancakes have given me all the fall feels.  Picture this.  You’re sitting down to a warm plate of fluffy, pumpkin pancakes.  You’ve got your piping hot, pumpkin spice coffee on the side.  Maybe you even turn on the fire for the first time this year, or light up a new fall scented candle.  I’m telling you, that my friend, is what Saturday dreams are made of.

 

 

So, whatever your reasoning, make these Pumpkin Spice Oat Pancakes.  Maybe you want to show your family that healthy eating can be delicious.  Or maybe you just want to set the scene and relax on a fall, Saturday morning.  And maybe, just maybe, you just want to sit down to a killer breakfast.

Pumpkin Spice Oat Pancakes

Ingredients
  • 1/2 cup pumpkin puree
  • 4 cage-free eggs
  • 1/2 cup oat flour **see recipe notes
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon Pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon pink Himylayan salt
  • 1 tablespoon coconut or avocado oil
Prep Time 5 minutes
Cook Time 15 minutes

  • 1/2 cup pumpkin puree
  • 4 cage-free eggs
  • 1/2 cup oat flour **see recipe notes
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon Pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon pink Himylayan salt
  • 1 tablespoon coconut or avocado oil
Instructions
  1. In a large mixing bowl, whisk pumpkin, egg, flour, vanilla, pumpkin pie spice, baking soda, and salt until well combined.
  2. Heat a large skillet over medium heat with oil. Pour the batter into the hot skillet, roughly a 1/4 cup per pancake. Brown on both sides (roughly 2-3 minutes per side).
  3. Top with maple syrup or coconut butter and serve hot.
