Almond Butter Turmeric Salad Dressing

For the longest time I was intimidated about making my own salad dressing. There was no way I could throw together a dressing that actually tasted good. I mean if you look at the label of any dressing in your fridge, you’ll probably find 20 different ingredients.

How on earth was I suppose to figure that out at home?

So my initial desire to make my own dressing was a fleeting moment to say the least. I continued to buy all my salad dressings. You may be in the same boat.

Believe me when I say YOU CAN DO IT! It is not hard.  With a few ingredients and just minutes of your time, homemade salad dressing can be yours. Additionally, you can skip all the crazy ingredients like high fructose corn syrup or disodium cuanylate. Trust me, you don’t need all that stuff for delicious dressing!  Make your dressing as basic or exotic as you want. Today I am featuring my take on the Almond Butter Turmeric Salad Dressing. However, if that’s a little to crazy for your taste buds, start with something like homemade ranch!

My first mistake was not making my own. The second, was limiting the fat content. Many of us restrict our fat intake. But, this isn’t always necessary! When I first started making dressings, I tried to keep the fat low to keep calories low. However, fat is vital to your dressing! Not only will it make it delicious, the fat works with the acidic base to emulsify the dressing. This ensures your dressing is well dispersed and doesn’t separate. Now, this doesn’t me you shouldn’t give your dressing a quick stir or shake before serving; but it definitely helps! Next, fat is essential to absorbing all the amazing nutrients in your salad! Without the fat, your body will have a tough time absorbing Vitamins A, D, E, and K.

You don’t want to let all those amazing nutrients go to waste. Don’t let your salad go naked, dress it to kill!

Lastly, I made one more mistake. I believe homemade dressing was putsy and complicated. In the case of this Almond Butter Turmeric Salad Dressing, you toss all the ingredients in the blender and magic appears. Then, all you need to do is transfer to a storage container and it’s ready to go! Voila, simple right?!

Well then, are you ready to take the plunge?  Be sure to show me your homemade dressing by tagging a photo with #stephanieleenutrition on Instagram.  I’d love to see what you all whip up. Happy eating, xo!
