Ahhh so much inspiration behind these Baked Italian Slider Sandwiches. It is unofficially, officially National Sandwich Day. It’s the unofficial day of all things sandwich. Bring on the Reubens, po boys, and patty melts. Ugh, decisions, decisions, I tell you.
Yes to the sandwiches!
I have to admit, I’m not generally one to make sandwiches at home. They are more of an “out-to-eat” treat. Yet every time I’m mid-bite in a tasty sandwich, I can’t get enough. But today was not a normal day. It’s sandwich day, duh! No excuses can out match a holiday.
With so many sandwiches to choose from, I had a tough choice to make today. This brings me to my next point of inspiration. In addition to National Sandwich Day, it’s Monday Night Football! You bet I’m going to be sitting down to watch my Packers play some football. Unfortunately, our beloved QB is out, so that means I needed a comfort food element in my sammies. If you’ve read my previous posts, I try to stick with my Meatless Monday tradition.
However, tonight’s the exception. I guess Meatless Monday is out and Meatless Tuesday is in.
Eventually I decided to take an Italian twist on some sliders. These little Baked Italian Slider Sandwiches are perfect for Game Day. The nice thing about sliders is they are easy to throw together for groups of 2 to 20. Furthermore, easy doesn’t translate to boring. My Baked Italian Slider Sandwiches sure pack a punch of flavors. From the savory cured meats, to the creamy mozzarella, and spicy pepperoncini, this sandwich leaves nothing to be desired.
This recipe strays a bit from what I normally preach. I usually try to take traditional recipes and make them a little more nutritious or lighten them up. But I didn’t cut any corners with this recipe. Sorry not sorry! It’s that whole 80/20 rule I talk about. Anyways, we all need a little splurge once in a while. If it makes you feel better, I used whole wheat slider! It makes me feel pretty good anyway.
For those who’d like to improve the nutrition a little more, I suggest whole wheat buns, low-sodium meats and thinly sliced cheese. This will help to reduce the sodium and/or calories. In addition to these tweaks, I also chose to serve mine with a garden salad instead of fries or chips.
Well happy National Sandwich Day to all my sammie loving friends. Drop a comment below and tell me your favorite sandwich or let me know how you like these tasty little sliders.
