Creamy Sugar Free Classic Coleslaw

It’s no secret I love a good salad. Something about a fresh salad seals the dinner deal everytime…especially in summer. Every burger, pulled pork sandwich, and hot dog needs a mound of coleslaw next to it.  There is no better way to balance your plate than with some Creamy Sugar Free Classic Coleslaw.

 

Imagine if your tangy, vinegar-style coleslaw and creamy, classic coleslaw had a baby.  You would get this Creamy Sugar Free Classic Coleslaw.  All those perfect, tongue-tingling flavors in one pretty, little package!  Only this time, we skip the sugar.

 

Shhhhhh….I promise it won’t be missed!

 

Creamy Sugar Free Classic Coleslaw

 

Skipping the added sugar makes this coleslaw a nutrient-dense, superfood powerhouse!  Cruciferous vegetables like cabbage provide tons of phytochemicals, vitamins, minerals, and fiber that are important to your health.  Seriously, what more could you ask for in a salad?!

  • You can skip the blood sugar spike
  • Helps to load up on phytonutrients, vitamins, and minerals
  • And ready in under 15 minutes

 

 

Now, I know I just said it can be ready in under 15 minutes. By all means, this can be done. If you’re all about shredding your own fresh cabbage and carrots, you’re looking at an extra 5-10 minutes. However, if you’re like me and don’t mind opting for the bagged stuff, you’ll be out of the kitchen in 15.  Maybe less if you have a well designed kitchen!

 

If you’re all about the bag, then this recipe is easily a dump and mix kind of recipe.  I recommend grabbing a large mixing bowl and placing all the dressing ingredients in at once and whisk it up. My Creamy Sugar Free Classic Coleslaw recipe calls to use stevia, either liquid or powder. I personally prefer the liquid as it blends a bit better. But, the choice is yours.  My recipe calls for two squirts of the liquid or 3-4 tablespoons of the powder. Stevia varies a bit by brand, so I always recommend starting with a little and adding more as needed.

 

Once you’ve got the sweetness where you like it, throw in the cabbage and toss. When it’s well coated toss in the fridge for 1-3 hours. This allows the cabbage to breakdown a bit and take on the flavor. I do recommend serving shortly after the 1-3 hours as the color of the purple cabbage will start to bleed.  If aesthetics don’t matter, then eat when you please!

  • 14 ounces bagged coleslaw mix
  • 1/2 head red cabbage, shredded
  • 1/2 cup Primal Kitchen Mayo (gluten, soy, canola free mayo, linked below)
  • 1/4 cup rice wine vinegar
  • 1 teaspoon dijon mustard
  • 3-4 tablespoons stevia powder (2 heavy squirts of liquid stevia)
  • 1/2 teaspoon pink Himylayan salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon celery seed

Creamy Sugar Free Classic Coleslaw
Instructions
  1. Prepare cabbage and set aside. In a large mixing bowl, combine mayo, vinegar, mustard, stevia, salt, pepper, and celery seed. Whisk to combine.
  2. Add in prepared cabbage and toss with dressing. Store in the refrigerator for 1-3 hours.
