Let’s talk breakfast. More specifically –>Â Dark Chocolate Flaxseed Waffles
Since starting my elimination diet (see more on that here), the cravings have been coming out of the woodwork. Seriously, though. All the things I never thought twice about before, I WANT. And I want them bad.
Normally, I’m pretty down with eggs for breakfast. They are quick, easy, and packed full of healthy fats. However, as of late, I can NOT get the breakfast breads out of my head! I’m talking pancakes, muffins, and yes, waffles. Like what the heck. These foods were never really my jam.
I can’t even right now. All day I dream about waffles.
So as you can see, waffles I must have. But in all seriousness, breakfast breads get a bad rap. Sure, they are usually loaded with excessive carbs, sugar, and provide little in the way of nutrition. But not these Dark Chocolate Flaxseed Waffles. After all, they are packed full of nutrition to get your morning started off right. You’ll find plenty of protein, healthy fats, fiber, and a lack of added sugar. This means:
- Protein: Not only is protein use to build and repair tissues, make enzymes, and hormones; it also keeps you feeling full throughout the morning.
- Healthy Fats: Getting in some healthy fats for breakfast is the best way curb hunger and keep you full and satisfied until your next meal. Bonus, egg yolks and flaxseed are full of omega-3 fatty acids which help fight inflammation!
- Fiber: Fiber not only keeps you regular, it also helps to improve your blood sugar, sense of fullness, and cholesterol.
- No Added Sugar:Â Forget the added sugar for sweetness, this recipe uses cocoa nibs and stevia drops to provide a subtle hint of sweetness without the blood sugar spike!
And if I just don’t have you convinced, think about that delicious, hot and crispy waffle hitting your mouth. After all, it’s a chocolate lovers’ dream. Chocolate for breakfast, sure! This Dark Chocolate Flaxseed Waffle will give you life!

- 2 whole eggs, beaten
- 1/2 teaspoon liquid stevia drops (see your brands conversion chart if using powdered stevia. Should be equivalent to 1 tablespoon of sugar)
- 1 teaspoon vanilla extract
- 3 tablespoons almond flour
- 3 tablespoons ground flaxseed
- 1 tablespoon cocoa powder
- 1/4 teaspoon baking powder
- pinch pink Himylayan salt
- 1 tablespoon cocoa nibs (may substitute with dairy-free chocolate chips)

- Spray a waffle iron with non-stick spray and heat. In a small mixing bowl, add wet ingredients (eggs, stevia, and vanilla), stirring to combine.
- Whisk in dry ingredients. Whisk until there are no longer any lumps or bumps. Transfer batter into the heated waffle iron.
- When waffle iron timer is complete, remove waffle and transfer to a plate. Top with favorite toppings and serve immediately.
