Healthy Cookie Dough Bites

No, I’m not particularly afraid of typical cookie dough. I don’t worry too much about catching salmonella from the raw egg. Additionally, I don’t steer clear of gluten and butter.  But, when an opportunity to make something more nutritious comes along, you take it.  Especially when you can make cookie dough suited to those steering clear of food poisoning, gluten, and high calorie snacks.

 

I rarely make cookies around here. Meaning, it’s pretty rare you’ll ever find some cookie dough. But as a child, I remember sitting in the kitchen, licking all the cookie dough beaters clean.  This probably happened pretty often. My mom makes a bomb chocolate chip cookie. Maybe you have similar childhood memories. Sometimes you just want the comfort of reliving these memories. You might even want to make these memories for your kiddos. But maybe there is also something holding you back.

 

What if I told you, you could relive these memories without the fear. The guilt of eating too many empty calories. Or the fear you might get yourself or your child sick. And forget the gluten, there’s none to be found here.

 

That’s right.  Take back your life. Eat the dang cookie dough.  We are here to rescue you with our Healthy Cookie Dough Bites. Eat just one or the whole thing.  There are plenty of goodies inside.  However, don’t tell the kids…or your husband…or anyone for that matter.  You just keep the mystery behind this cookie dough to yourself.  No one but you and I needs to relish in the healthy, nutritious ingredients.

 

So, let’s just keep this between you and me!

 

Next time you can sneak 5-10 minutes out of your day, I suggest you head to the kitchen. But, be as quiet as you can before starting the food processor.  Again, no need to let anyone else know what’s inside.

 

In just a few minutes,  you can have a heaping bowl of creamy, chocolate chip cookie dough.  All you need is a food processor for this one.  Start by placing all the ingredients into your food processor, but be sure to leave out the chocolate chips.  Once you’ve got a smooth, creamy dough, add in the chocolate chips. Using a spatula, stir well to combine. Lastly, I recommend covering and placing in the fridge for about an hour.  This will help the dough firm up just a touch. I also think it makes it taste better!  If you’re feeling really daring, I also suggest you try the freezer.  Frozen cookie dough for the win!

Healthy Cookie Dough Bites

Ingredients
  • 1 15 ounce can chickpeas (garbanzo beans), rinsed and drained
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 tablespoon chia seeds
  • 1 teaspoon flax seed
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips
Prep Time 10 minutes
Passive Time 1 hour
Servings
Ingredients

  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 tablespoon chia seeds
  • 1 teaspoon flax seed
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips
Instructions
  1. Combine all ingredients except for chocolate chips in a food processor. Process on high for 2-3 minutes.
  2. When all ingredients are blended and lumps and bumps are gone, stir in 1/2 cup of chocolate chips. Place in a covered, storage container and place in fridge for 1 hour. Serve cold.
