Holiday Gingerbread French Toast

I always talk about how I’m not much of a breakfast person. I’m perfectly content with some fruit and Greek yogurt or a bowl of overnight oats.  Just a no-fuss breakfast kind of gal. But today was a new day. Since I worked this past weekend at the hospital, I have a couple extra days off this week. This means perfect, slow mornings.

 

When I finally rolled out of bed, I made my way to the coffee pot. I poured myself a big mug and sat down at the dining table. While I was drinking my hot cup of joe, I was checking out all the snow on the ground. The chilly weather had me craving  more than just yogurt or cottage cheese.

 

I needed something warm.

 

My snowflake, fuzzy slipper socks just weren’t doing it. I needed a nice toasty breakfast to make this slow morning complete.  Since I’m trying to keep with the holiday spirit, I bring you Holiday Gingerbread French Toast.  Can you say yum?!

 

 

A few days ago I was contemplating putting together some gingerbread cookies. But let’s be real. I’ve got a couple dozen cookies sitting on the counter right now. The last thing the hubby and I need is another dozen cookies.  I can hardly motivate myself to walk out to the mailbox in this weather, much less extra trips to the gym. So this Holiday Gingerbread French Toast was my compromise. And a tasty compromise it was.  It didn’t feel like much of a compromise at all as I was stuffing my face with this sweet and spicy treat.

 

 

While I believe this recipe is perfect for any day of the week, it probably has an even better purpose. Holiday Gingerbread French Toast would make the perfect Christmas morning breakfast.  Can you imagine munching on this breakfast with the family after opening presents under the tree. What a memory!

 

Lastly, this recipe won’t take away from family time. With about 5 minutes of prep work, and 15-20 minutes of cook time, you won’t be slaving in the kitchen all morning. Furthermore, there are so many great toppings for this french toast.  I went all out, using whipped cream, confection sugar, and maple syrup. Don’t skimp on the syrup, get the real deal. I also went on to add even more cinnamon. Delicious!  You could even get crazy and add some chocolate chips or cream cheese frosting.  So many options you may even make this everyday until Christmas!

Holiday Gingerbread French Toast

Ingredients
  • 3 tablespoons butter
  • 2 whole eggs
  • 1/4 cup vanilla creamer
  • 1/4 cup milk of choice (I used unsweetened vanilla almond milk)
  • 1/4 teaspoon all spice
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 teaspoon vanilla extract
  • 12 slices bread of choice (I use Pepperidge Farm Light Oatmeal Bread)

  • 3 tablespoons butter

Instructions
  1. In a large skillet, melt butter over medium heat. Whisk together eggs, creamer, milk, spices, and vanilla and pour into a shallow container.
  2. Dip bread slices into egg mixture. Fry slices in skillet until golden brown, then flip to cook the other side.
  3. Serve with syrup, whipped cream, or powdered sugar.
