Pumpkin Almond Butter Blondies

Fall has finally arrived at SLN!  That’s right, pumpkin spice season is here and so are our Pumpkin Almond Butter Blondies!

 

I’ve been holding out on the pumpkin everything train.  Midwest winter are literally the worst so I’ve been holding on to summer as long as I can.  Thus far, the only fall inspired food I’ve had is the Pumpkin Spice NutPods Creamer (and they don’t disappoint). However, now it’s October, we are almost two weeks into fall, so I’m just going to submit already.  If I’m going to submit to fall, I’m at least going to treat myself, starting with these blondies.

 

 

In your wildest pumpkin dreams, did you ever think you’d be treating your tastebuds to a healthy pumpkin spice treat? After all, how could these decadent Pumpkin Almond Butter Blondies be ooey-gooey delicious and healthy at the same time?!  But trust me, they may taste naughty, but they’re twice as nice!

 

Go ahead, be skeptical.  I’m still asking myself how the heck these are healthy.

 

 

But at least promise me you’ll give them a try.  The fudgy, melt-in-your mouth texture will surprise you.  And yes, you will come back for more.  You may even find yourself dragging out pumpkin season well into December!

 

It’s hard for me to decide what’s my favorite part.  Maybe it’s the fact that they are super simple to prepare. Or maybe it’s because they are packed full of healthy fats and vegetables. And maybe, just maybe because they are made with simple, whole ingredients. You’ll have to decide for yourself!

Pumpkin Almond Butter Blondies

Ingredients
  • 1 cup creamy almond butter
  • 1 cup pumpkin puree
  • 1/2 cup stevia in the raw see recipe notes
  • 1 egg
  • 1/2 tablespoon Pumpkin pie spice
  • 1/2 teaspoon pink Himylayan salt
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup dairy free chocolate chips (more for topping if desired)

  • 1 cup creamy almond butter
  • 1 cup pumpkin puree
  • 1/2 cup stevia in the raw see recipe notes
  • 1 egg
  • 1/2 tablespoon Pumpkin pie spice
  • 1/2 teaspoon pink Himylayan salt
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup dairy free chocolate chips (more for topping if desired)
Instructions
  1. Preheat oven to 375 degrees. Prepare an 8" baking dish with parchment paper; set aside.
  2. In a large mixing bowl, combine almond butter, pumpkin, stevia, egg, pumpkin pie spice, salt, vanilla, and baking soda, using a hand mixer. Fold in chocolate chips. Transfer the batter into the prepared baking dish. Press down and spread evenly. Top with additional chocolate chips if desired.
  3. Place in the oven and bake for 25-35 minutes. The blondies should be golden brown and the center should be set. Remove from oven and let cool for 10-15 minutes before serving.
Recipe Notes

Sugar substitutes should be equivalent to 1/2 cup of sugar.  Equivalents may vary by sweetener brand.
