Apple Slaw Salmon Burgers

Ingredients
  • 1 small red onion 1/2 sliced, 1/2 diced
  • 1/3 head red cabbage, sliced
  • 3 tablespoons rice vinegar
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • 1 15 ounce can salmon, drained
  • 2 large eggs
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon dried dill 1/2 for salmon patties, half for slaw
  • 1/2 teaspoon low sodium Old Bay seasoning
  • 1/3 cup sour cream
  • 1/8 cup mayo
  • 1 granny smith apple, thinely sliced
  • 4 buns

Instructions
  1. In a large bowl, combined sliced onion and cabbage. Add in rice vinegar, lemon, juice, salt, and pepper, tossing to combine. Set aside.
  2. In another bowl, combine diced onion, salmon, eggs, breadcrumbs, dill, and Old Bay seasoning. Add in additional salt and pepper to taste. Mix to combine. Form the salmon mixture into patties, you should end up with about 4 patties.
  3. In a large skillet, heat a drizzle of oil over medium high heat. Add salmon patties into pan and cook until browned, about 2-4 minutes per side.
  4. While patties cook, add apple, sour cream, mayo, and dill to the cabbage and onion mixture, toss to combine. Serve salmon patties on the bun and top with apple slaw.
