Balsamic Berry Grilled Cheese

Ingredients
  • 1/2 cup berries (blueberries, raspberries, blackberries)
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 2 slices whole wheat bread
  • 1-2 tablespoons butter
  • 2 ounces goat cheese, softened
  • 3-5 fresh basil leaves

  • 1/2 cup berries (blueberries, raspberries, blackberries)
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 2 slices whole wheat bread
  • 1-2 tablespoons butter
  • 2 ounces goat cheese, softened
  • 3-5 fresh basil leaves
Instructions
  1. In a small saucepan, combine berries, honey, and balsamic vinegar. Bring to a boil with medium heat. Once boiling, reduce heat and simmer for 5 minutes. After simmering drain excess juice from berries.
  2. Take one slice of bread and spread with half the butter on the side you will be frying or grilling. On the unbuttered side, top with goat cheese, berry mixture, and basil. Butter other slice of bread and place on top. In a small fry pan, heat until both sides are golden.
