Chocolate Chip Chickpea Cookies

Ingredients
  • 1 15 ounce can chickpeas (garbanzo beans), rinsed and drained
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon flax seed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips

  • 1 15 ounce can chickpeas (garbanzo beans), rinsed and drained
  • 1/2 cup creamy natural peanut butter
  • 1/4 cup maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon flax seed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi sweet chocolate chips
Instructions
  1. Preheat oven to 325 degrees. Combine all ingredients in a food processor except for chocolate chips. Allow to blend until mixture is smooth.
  2. When all ingredients are blended and lumps and bumps are gone, stir in chocolate chips.
  3. Using a cookie scoop or spoon, scoop out 1-2 tablespoons of dough and place evenly across baking sheet. I suggest slightly flattening the dough as they will maintain their shape during baking.
  4. Place in the heated oven and bake for 13 minutes. Remove from oven and allow to cool.
