Ingredients
- 2 whole eggs, beaten
- 1/2 teaspoon liquid stevia drops (see your brands conversion chart if using powdered stevia. Should be equivalent to 1 tablespoon of sugar)
- 1 teaspoon vanilla extract
- 3 tablespoons almond flour
- 3 tablespoons ground flaxseed
- 1 tablespoon cocoa powder
- 1/4 teaspoon baking powder
- pinch pink Himylayan salt
- 1 tablespoon cocoa nibs (may substitute with dairy-free chocolate chips)

Instructions
- Spray a waffle iron with non-stick spray and heat. In a small mixing bowl, add wet ingredients (eggs, stevia, and vanilla), stirring to combine.
- Whisk in dry ingredients. Whisk until there are no longer any lumps or bumps. Transfer batter into the heated waffle iron.
- When waffle iron timer is complete, remove waffle and transfer to a plate. Top with favorite toppings and serve immediately.
