Dark Chocolate Flaxseed Waffles

Dark Chocolate Flaxseed Waffles

Ingredients
  • 2 whole eggs, beaten
  • 1/2 teaspoon liquid stevia drops (see your brands conversion chart if using powdered stevia. Should be equivalent to 1 tablespoon of sugar)
  • 1 teaspoon vanilla extract
  • 3 tablespoons almond flour
  • 3 tablespoons ground flaxseed
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon baking powder
  • pinch pink Himylayan salt
  • 1 tablespoon cocoa nibs (may substitute with dairy-free chocolate chips)

Instructions
  1. Spray a waffle iron with non-stick spray and heat. In a small mixing bowl, add wet ingredients (eggs, stevia, and vanilla), stirring to combine.
  2. Whisk in dry ingredients. Whisk until there are no longer any lumps or bumps. Transfer batter into the heated waffle iron.
  3. When waffle iron timer is complete, remove waffle and transfer to a plate. Top with favorite toppings and serve immediately.
