Easy Egg Salad Sandwich

Ingredients
  • 8 cage-free eggs (see notes below)
  • 1/3 cup Primal Kitchen Mayo (see notes below)
  • 1 teaspoon dijon mustard
  • 1/2 cup celery, diced
  • 1/8 cup green onions, chopped
  • 1/4 teaspoon paprika
  • salt and pepper, to taste
  • 2 cups spinach or romaine lettuce
  • 8 slices bread of choice (I use Udi's Gluten-Free Hearty Seeds and Grains)

Instructions
  1. Hard boil eggs using your favorite method. When eggs have cooled, remove shell and chop. Transfer the chopped eggs to a medium-size mixing bowl. Stir in mayo, mustard, celery, and green onions. Season with paprika, salt, and pepper. Then stir to combine.
  2. Serve between two slices of bread with cripsy lettuce or spinach.
