Southwest Spinach Turkey Poppers with Cilantro Aioli

Ingredients
  • 1 pound ground turkey
  • 10 ounces frozen spinach, thawed and drained (remove as much excess water as possible)
  • 3 green onions, chopped
  • 1/8 cup cilantro, roughly chopped
  • 2 cloves garlic, minced
  • 1 teaspoon pink Himylayan salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 cup cilantro aioli (optional, see recipe notes for recipe)

Instructions
  1. Preheat oven to 375 degrees. In a large bowl, combine ground turkey, spinach, green onions, cilantro, garlic and dried seasonings. Stir well to evenly distribute ingredients.
  2. Line a large baking sheet with parchment paper. Roll the mixture into small poppers, approximately 1 tablespoon per popper. Slightly flatten and place on baking sheet. This should make approximately 2 dozen poppers.
  3. Place in the oven and bake for 30 minutes, flipping halfway through. Serve warm with fresh vegetables and cilantro aioli.
