As much as I like to cook, I don’t always have time to throw an elaborate dinner together. I’m sure you can related. Everyone needs a few quick and easy recipes up their sleeve. I’m talking about those delicious recipes that come in clutch to save the day.
Especially when life happens to the best of us. If you need a quick two-minute sob story filled with first world problem to set the tone. I got you. If not, skip down to the recipe.
This past weekend, I spent a few days out-of-town. For whatever reason, I decided it was a good idea to make a trip back home in a snow storm. Finally pulled onto my street and could barely get my puddle-jumper-of-a car up our flat driveway. I’d say it was covered in about a half-foot of snow and no hubby to save the day.
I’m generally pretty lucky to have a hubby that takes care of the outdoor stuff. All the snow included. Sure we have a snowblower. Think I know how to use it? No, nope I don’t. So there I go, out to tackle the driveway with my measly, little shovel.
Oh, it gets worse when I can’t find my mittens. I’m telling you, the struggle was real. I shuffled my way back into the house, put my fuzzy socks on my hands, and got back out there. No one wants cold fingers.Ā An hour later, I finally finished up.
Done and STARVING.Ā I’m talking straight upĀ hANGRY.
This is one of those times where you skip the elaborate dinner, the time-consuming prep work, and the endless dishes. For me it was the snow. Maybe for you it’s after a long day of work, heading back home to pick up the kids, and trying to throw a meal together while helping with homework. We all have that something. That’s when you crack out theĀ Southwest Chicken Sausage Skillet recipe.
A few minutes of slicing and dicing will give you a meal on the table in 25 minutes. All you need is one pan, in my case, my favorite cast iron pan. If you don’t have one, you need one. Pour a drizzle of olive oil in the pan and toss in your diced sweet potatoes, seasoning with some salt’n peppa! Allow them to cook over medium-high heat and stir occasionally. Allow about 8-10 minutes for the potatoes. You want them crispy on the outside and tender on the inside.
While the potatoes cook away, I like to finish dicing up my peppers, mincing the garlic, and slicing the sausage. When your potatoes start to brown. Toss in your peppers, garlic and seasoning.Ā Stir in and continue cooking for 3-5 minutes, until peppers become tender.
As the peppers soften, add the sliced chicken sausage to the skillet. Stir to combine and cook for another 2-3 minutes to warm the sausage through. Finally, garnish with a little fresh thyme and you are ready to go. - 2 tablespoons olive oil
- 2 large sweet potatoes, diced
- salt
- pepper
- 1 medium green pepper, diced
- 1 medium red pepper, diced
- 1 medium yellow pepper, diced
- 1 tablespoon garlic, minced
- 1 tablespoon cumin
- 1/2 tablespoon chili powder
- 12 ounces chicken sausage
- fresh thyme optional for garnish

- Add olive oil to a large skillet and heat over medium-high heat. When hot, add diced sweet potatoes and season with salt and pepper to taste. Cook for 8-10 minutes until browned and tender.
- When potatoes have browned and softened, add diced peppers, garlic, cumin, and chili powder. Stir to combine and cook for 3-5 minutes, until peppers soften.
- Add in sliced chicken sausage. Cook for 2-3 minutes until chicken sausage is cooked through. Garnish with fresh thyme and serve immediately.
