Thai Turkey Stir Fry

I’ll admit, I’ve been all about the quick dinner these days. In all honesty, my drive for cooking has been pretty absent the last couple weeks. And, if you know me, this is pretty out of character. The last few weeks have crazy to say the least. I’ve been doing my best to take my advice about self care and filling up my cup.  But we all get overwhelmed once and awhile.

 

While I’ve been taking time to reflect and do things that recharge my body, I realized I’ve been avoiding one of my favorite forms of therapy…COOKING?!  Nothing fills my cup like getting in the kitchen and making some delicious food.  Not only cooking for myself, but also my loved ones.  After a little self-reflection, I made some intentions to get me back in the kitchen. Any easy way to do this is starting off slow. What better way to get back at than with some 30 minute, Thai Turkey Stir Fry?!

 

 

I’m sure there is some holistic, ancient remedy built into the foundation of Asian-inspired food. There has to be. I mean this stuff seriously soothes the soul.  Medicine that tastes good?! While I blame the good feels on the ginger, you should get in the kitchen and try this out for yourself.

 

And if I really want to talk about how this stuff will fill your cup…you gotta nourish to flourish baby!  Not only does this Thai Turkey Stir Fry taste like food therapy, you can feel good about fueling your body.  I made sure to pack this recipe with nutrients from bell peppers, green beans, garlic, scallions, and ginger. They will leave you fueled and feeling good.  I even substituted liquid aminos from the traditional soy sauce as a way to decrease the sodium and add a few more amino acids.  Really, what’s not to love?!  You’ve got it all right here, feel good, nourishing, quick food. It’s the total package!

Thai Turkey Stir Fry

Ingredients
  • 1 cup uncooked brown rice
  • 1-2 tablespoons olive oil
  • 12 ounces green beans, trimmed
  • 1 large red bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 scallions, diced
  • 1 teaspoon dried ginger
  • 16 ounces ground turkey
  • 3 tablespoons coconut aminos
  • 2 tablespoons maple syrup
  • salt and pepper, to taste
  • 2-3 stalks green onion, diced

  • 1 cup uncooked brown rice
  • 1-2 tablespoons olive oil
  • 12 ounces green beans, trimmed
  • 1 large red bell pepper, sliced
  • 4 cloves garlic, minced
  • 2 scallions, diced
  • 1 teaspoon dried ginger
  • 16 ounces ground turkey
  • 3 tablespoons coconut aminos
  • 2 tablespoons maple syrup
  • salt and pepper, to taste
  • 2-3 stalks green onion, diced
Instructions
  1. Bring salted water to a boil in a medium pan. Cook rice per package directions. Remove from heat and keep covered until meal is ready to be served.
  2. In a large fry pan, add olive oil and heat on high for 1-2 minutes. Add in green beans, bell pepper, half of the garlic, and scallions. Stir occasionally and cook for 4-5 minutes. Season with salt and pepper to taste. Remove from pan and set aside.
  3. In the same large pan, reduce heat to medium. Add in another drizzle of olive oil and add remaining garlic and ginger. Stir and allow to cook for one minute.
  4. Add ground turkey to the pan. Break up the meat into small pieces and cook until no longer pink, roughly 5 minutes. Add in vegetables, coconut aminos, and maple syrup. Season with additional salt and pepper to taste.
  5. Fluff rice with a fork and divide among plates. Top with stir-fried veggies and turkey. Garnish with green onions if desired.
