This weather lately is making me stir crazy for spring and summer. We’ve been blessed up here with a few 60 degree days which is pretty amazing for February up here in the Midwest. Sunshine and a warm breeze was just what I needed. I’m sure you can relate to the need for some nice weather in the dead of winter. The sunshine sure does a lot of good this time of year.
I’m actually sitting on the floor of my living room while I write this. Sitting right by my window in a big patch of sun. The touch of warmth feels good on this chronically cold body of mine. Not only did this weather have me feeling like spring and summer, it has me eating like summer.
Is this really anything better than sitting out on your deck in the sunshine, eating a hearty burger. Didn’t think so. And these Apple Slaw Salmon Burgers won’t disappoint.
So you’re probably wondering why I didn’t just opt for a traditional burger. Sure, I like a beef hamburger once in a while. Who doesn’t?! But, you’ve also probably heard me blubbering about how I’ve been making intentional efforts to eat more omega-3s. They do a body good! Salmon tends to be one of the easier options to get in all those nutrients. But I’m no stranger to the high price tag. Sometimes I just don’t feel like paying $10-$15/pound for fish.

One of the ways I’ve supplemented my salmon intake with canned salmon. One of my favorite canned salmon varieties is by Wild Planet. You’ll see I provided a link to it, but know that it tends to be a bit cheaper in store. There are quite a few varieties of canned salmon in store, but I like that this is sustainably caught, Alaskan salmon. Additionally, it is free of bones and skin. You get the idea. While this is on the higher end in price for canned salmon, the choice is up to you. You’ll definitely be able to find some cheaper varieties in store, but I can’t attest to the quality.
The prep work on this recipe will take a bit of your time. You’ll have to slice up lots of onion, cabbage and apple. But after that, it’ll be easy peasy, lemon squeezy.
I like to start off my mixing up the first half of the slaw. Mixing the cabbage and onion with the vinegar and lemon first helps break down the veggies. This way, they will be softer with just a touch of crunch. While that marinades together, I like to put the salmon patties together. You can really just put everything in the bowl together and mix well. Using your hands, for the salmon mixture into patties. You should end up with about four patties.
Then, place the patties into a hot pan with a touch of oil. Allow them to cook for 2-4 minutes, or until golden brown. Flip the patties over and repeat. While the patties are cooking, I like to finish off the slaw with the remaining ingredients. Once the apple slaw and salmon burgers are finished up. You can place the salmon burger on your bun and top with apple slaw. Finally, if you want a little extra veggies on your Apple Slaw Salmon Burgers, I recommend adding a touch of fresh spinach or lettuce.

- 1 small red onion 1/2 sliced, 1/2 diced
- 1/3 head red cabbage, sliced
- 3 tablespoons rice vinegar
- 1 tablespoon lemon juice
- salt and pepper, to taste
- 1 15 ounce can salmon, drained
- 2 large eggs
- 1/2 cup panko breadcrumbs
- 1 tablespoon dried dill 1/2 for salmon patties, half for slaw
- 1/2 teaspoon low sodium Old Bay seasoning
- 1/3 cup sour cream
- 1/8 cup mayo
- 1 granny smith apple, thinely sliced
- 4 buns

- In a large bowl, combined sliced onion and cabbage. Add in rice vinegar, lemon, juice, salt, and pepper, tossing to combine. Set aside.
- In another bowl, combine diced onion, salmon, eggs, breadcrumbs, dill, and Old Bay seasoning. Add in additional salt and pepper to taste. Mix to combine. Form the salmon mixture into patties, you should end up with about 4 patties.
- In a large skillet, heat a drizzle of oil over medium high heat. Add salmon patties into pan and cook until browned, about 2-4 minutes per side.
- While patties cook, add apple, sour cream, mayo, and dill to the cabbage and onion mixture, toss to combine. Serve salmon patties on the bun and top with apple slaw.
