We’re talking real simple today. Like easy egg salad sandwich simple.
Do you ever just get a craving for the basics? Well here’s the deal, I needed an easy egg salad sandwich. Why? Because.
I’m getting real creative with my recipes around here. Following my heart and the heart wants what the heart wants. Or maybe the taste buds want what the taste buds want. Either way, I’m digging into this egg salad sandwich.
Okay. So let talk about this little gem of recipe today. I keep it pretty basic. No adventurous add-ins, no crazy spices needed. After all, it is called Easy Egg Salad Sandwich. Basically, all you have to do is get your hands on some hard-boiled eggs. I usually keep them on hand because, well snacks. Try my recipe here.
Then peel your cooled, hard-boiled eggs and chop them up. Transfer to a bowl and add in all the goods –> celery, green onion, mayo, mustard and spices. Stir, stir, stir and slap a big scoop onto your favorite bread. Personally, I like to take my sandwich up a notch by toasting my bread and layering with a hefty dose of spinach for some color.
When making your sandwich, I feel like the Primal Kitchen Avocado Mayo is kind of a non-negotiable. It’s made the way mayo is suppose to be made. Can we just compare ingredients for a sec?

- 8 cage-free eggs (see notes below)
- 1/3 cup Primal Kitchen Mayo (see notes below)
- 1 teaspoon dijon mustard
- 1/2 cup celery, diced
- 1/8 cup green onions, chopped
- 1/4 teaspoon paprika
- salt and pepper, to taste
- 2 cups spinach or romaine lettuce
- 8 slices bread of choice (I use Udi's Gluten-Free Hearty Seeds and Grains)

- Hard boil eggs using your favorite method. When eggs have cooled, remove shell and chop. Transfer the chopped eggs to a medium-size mixing bowl. Stir in mayo, mustard, celery, and green onions. Season with paprika, salt, and pepper. Then stir to combine.
- Serve between two slices of bread with cripsy lettuce or spinach.
