I am a meatball girl you guys. Meatballs in my spaghetti, meatballs on my sub, meatballs appetizers; meatballs are my jam.
Normally, you’ll be able to find a few bags in my freezer. You’ll even find a variety of homestyle, Italian, and vegan. I don’t discriminate with meatballs. But, I must admit, I don’t generally make them by scratch.
I attribute that to the lack of meat I keep in the house. In the past, I’ve been pretty used to buying meat on an “as needed” basis throughout the week. Additionally, with my lack of freezer storage, it was difficult to stock up. A little over a month ago, the hubby and I finally bought a bulk freezer. FINALLY! Shortly there after, we bought a half a cow from a local farmer. Let’s just say we have beef coming out of our ears.
With this in mind, I’ve had the itch to get creative with my beef recipes. Admittedly, I don’t have a large arsenal of beef recipes. But, like I said, I have a love for meatballs. Plus, the craving for spaghetti and meatballs was real this week. Or in my case, penne and meatballs.
Though I don’t generally make my own homemade meatballs, I had an idea how to make them. I knew I wanted them to be Italian, flavorful, and tender. This gave me some ideas for the recipe. Luckily, it all worked out in my favor. Additionally, bonus points for them being ridiculously easy. My favorite recipes are the kind you can dump in bowl, throw together, and toss in the oven. No fuss!
However, I understand this recipe makes quite a few meatballs. You may be wondering what you are going to do with the extras. It makes a little over two dozen, depending on the size of your meatball. Fortunately, you can freeze any extras. Just start by using what you need. Then, do as I do and toss the rest in a freezer bag. Finally, wait for your my next meatball craving and you’ll be ready to go!

- 1 1/2 pounds ground beef
- 1/2 cup panko, Italian seasoned
- 1/2 cup sour cream
- 1/2 cup parmesan cheese, grated
- 2 eggs
- 2-3 cloves garlic, minced
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 tablespoons dried parsley

- Preheat oven to 375 degrees. In a large mixing bowl, combine all ingredients. Using your hands or a spatula, mix well.
- Prepare a baking sheet by covering with parchement paper or spraying with cooking spray. Scoop out 1-2 tablespoons of mixture and roll into a ball using your hands. Place meatballs onto the baking sheet.
- Bake uncovered for 20-25 minutes or until no longer pink. Serve as an appetizer with your favorite sauce or over spaghetti.
