Ingredients
  • 2 cups all-purpose flour
  • 2/3 cup Truvia baking blend (1 cup regular sugar)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plain, non-fat Greek yogurt
  • 2 whole eggs
  • 3 tablespoons milk of choice
  • 3 ripe bananas

  • 2 cups all-purpose flour
  • 2/3 cup Truvia baking blend (1 cup regular sugar)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plain, non-fat Greek yogurt
  • 2 whole eggs
  • 3 tablespoons milk of choice
  • 3 ripe bananas
Instructions
  1. Preheat oven to 325 degrees. Generously grease a muffin tin with cooking spray.
  2. While oven is heating, combine dry ingredients (flour, Truvia, baking soda, baking powder, and salt) in a large mixing bowl. Stir to combine.
  3. Add applesauce, yogurt, eggs, milk and bananas to the dry mixture. Using a spatula, stir the wet ingredients into the mixture to moisten the dry ingredients.
  4. When the mixture is partially combined, use an electric mixer. Mix on medium until well combined.
  5. Transfer the batter into the greased muffin tin and place in the oven.
  6. Bake for 25-35 minutes, or until a toothpick can be inserted into the center and come out clean. Let the muffins cool in the pans for about 10 minutes, then turn out onto a wire rack to cool completely.
  7. Enjoy warm as is or with a pat of butter.
